Courgette Spaghetti

It’s a food revelation! Opt for green or yellow courgettes to create this vegetable alternative for pasta

  • 2 courgettes
  • Lemon zest
  • Olive oil
  1. Trim and julienne the courgettes (or use your spiraliser)
  2. Pop the courgette ‘spaghetti’ in a colander with a splash of olive oil and lemon
  3. Toss, then set aside over a bowl to drain for 10 minutes

Finish with a big pinch of Maldon
