Radish Top Pesto

These tops are peppery and pleasantly pungent which work beautifully in a pesto

  • Bunch of radish tops
  • 1 garlic clove
  • Squeeze of lemon
  • 3 tbsp. olive oil
  • 50g parmesan
  • Handful of pine nuts
  1. Drop the tops, lemon, garlic, olive oil to your food processor and pulse to form a thick paste
  2. Add the parmesan and pine nuts

Finish with a big pinch of Maldon
